Dennis Tafuri, manager of Metropolitan Café, Freehold, has earned intermediate certification from the American Sommelier Association. Tafuri attended a 22-week course at the Borgata Hotel, Atlantic City. The course included instruction on topics including wine laws in specific wine regions, component tasting, permissible grapes, and food and wine pairing. Of the 60 people who registered for the course, Tafuri was one of only nine people to complete the training. Tafuri has been with Metropolitan Cafe for five years, and plans to continue his wine training to complete his master sommelier certification.
